Asparagus & Mash

Ingredients
serves 2 (or a very hungry 1!)

  • 1-2 cups prepped fresh asparagus (see step 1)
  • 3 large potatoes
  • 1/4 cup milk
  • 2-3 Tbsp butter
  • 1/2 cup cheese (mozzarella, Parmesan or any other cheese you like!)
  • salt & pepper
  1. Snap the tops off the asparagus. Discard the ends.
  2. Steam or blanch the asparagus tops for 3-5 minutes.
  3. Boil some water in a large pot.
  4. Peel and cut the potatoes into small cubes and add to the boiling water in the pot.
  5. Boil for 15-20 minutes or until the potatoes are cooked through and soft.
  6. Transfer the potatoes to a bowl, add the butter, milk and cheese. Season with salt & pepper to taste.
  7. Serve with a boiled egg if you like!
