Another win for the anti-candida, b.e.d. crew! My bff Zoe managed to make sugar free jam that we can eat on the b.e.d. diet! I made some with grapefruit and some with frozen cranberries and although the cranberry was better they both came out great!A nice little treat if you’re on a sugar free or anti-candida diet.

Sugar Free Jam

Ingredients

yield 4-6 cups

  • 6 cups fruit
  • 1 1/2 cup stevia (or to taste)
  • 3 leaves clear gelatin (aprox. half an envelope powder gelatine)
  1. Peel the fruit if needed and add to a saucepan with the stevia.
  2. Bring to the boil and cook for 10-15 minutes. You don’t need to cook until the jam thickens as it won’t, since there’s no sugar.
  3. Soak the gelatin in some cold water for 5-7 minutes or dissolve according to package instructions if using powder.
  4. Add the gelatin to the jam and stir well to dissolve.
  5. Pour into clean jars, let cool and refrigerate.

The stevia let’s the natural flavors of the fruit to shine through and will never be as sweet as sugar. If you’re on a restrictive diet though you will definitely enjoy it!

After trying both cranberry and grapefruit, I don’t think I’ll be making the grapefruit jam again since it’s just too bitter. The cranberry came out sour but delicious!
