Finally! I’ve managed to bake a gluten and sugar free cake that actually tastes, well, like cake! It’s spice flavor is perfect for fall.

Although you need a few ingredients to make it, it’s so worth it if you’re on a restrictive diet. Give it a try!

Gluten/Sugar free Spice Cake

Ingredients

  • 1 cup buckwheat flour
  • 1/2 cup linseed, ground
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 cup almonds, ground
  • 3 eggs
  • 1/4 cup butter, softened
  • 3 Tbsp coconut oil
  • 1/2 cup stevia
  • 1 cup steamed butternut squash
  1. Preheat oven to 180°C.
  2. Beat eggs with the linseed and set aside for at least 10 minutes.
  3. Combine and mix together the dry ingredients.
  4. Add butter, stevia and coconut oil to the egg mixture and beat with electric mixer until combined.
  5. Slowly beat in the dry ingredients, alternating with the squash.
  6. Oil a pyrex or cake pan.
  7. Spread cake mix in the pan and bake for 30 minutes or until a toothpick comes out clean when inserted in the middle and the cake is cooked and springy.
